Down Range Eatery
Where special dietary needs are the norm!
I’m Susan and you will find me in the kitchen at DRE.
Around 2006 started my struggle with food. After a painful dermatological issue with my feet, the Dermatologist recommended I eat a gluten free diet. It would take a decade and countless doctor visits to get diagnosed as Celiac.
In 2011, I was diagnosed with Grave’s Disease which is a fancy name for hyperthyroidism - my thyroid works too well. One of the effects is an overworking metabolism which makes me hungry all the time.
If that wasn’t enough, in 2018 I was diagnosed with type 2 diabetes. This diagnosis was inevitable considering we have traced diabetes back to a maternal great, great, great (possibly one more great) grandmother that died from complications of diabetes in 1935.
During all of this, I was diagnosed with asthma, and I had LEAP testing done. The LEAP testing gave me a list of foods that my body has a hard time processing adding to the growing list of foods I should not eat.
All the medical conditions make it extremely difficult to enjoy dining out with family and friends, and not just for me. I know it is difficult and frustrating for my family as well. And this is why we opened Down Range Eatery. We want to offer great food for everyone, no matter what you can and cannot eat.

Growing up I always wanted to serve my country. I served in the Air Force at the end of the first Gulf War. After my Air Force service, I found myself as a civilian plumber and enjoyed doing so for several years.
After seeing the affects 9/11 had on the country I made the decision to reenlist and joined the Army National Guard. In 2004, my unit was activated and spent 2005 in Iraq.
As a disabled Veteran, my next act of service is to be my wife’s biggest supporter. Susan has always wanted to have a small restaurant, but with raising kids it was never in the cards. I admire her passion to continue living life well after going through her journey of ailments.
Now the opportunity has come for us to open a restaurant that caters to those folks that have the same ailments as my wife. I feel that everyone should be able to go out to eat and enjoy a meal. No one should fear the repercussions of ingredients in the food.
MYTH: Gluten free food tastes disgusting.
TRUTH: Many gluten free foods taste as good or better than their gluten filled counterpart.

My kitchen is a dedicated gluten free kitchen. We want to maintain a safe environment and give our patrons peace of mind. I also do not use salt or pepper** during cooking, but don’t let that fool you. You will still feel that explosion of flavor in every bite!
**Strangest thing, pepper causes me to have an asthma attack so I can’t use it.

A protein found in wheat, barley, and rye.
What area of the body does Celiac disease effect?
The small intestine, more specifically the villi that lines the small intestine.
The villi are responsible for absorbing important nutrients the body needs.
How is Celiac Disease diagnosed?
Gold standard is a small intestine biopsy to look for damage to the organ.
